In the tradition of sharing and giving, we thought we would offer our family’s traditional lasagna recipe. This was passed down from my mother and is something that my wife and I enjoy making for our family and friends. One thing I will point out, you can never make too much as it is a favorite leftover the next day in our home.

On behalf of myself, my family, and everyone at PGI, we hope you have a safe and happy holiday season – we look forward to working with you this coming year!

Warmest wishes,

Bill Peeler

OUR FAMILY’S TRADITIONAL LASAGNA RECIPE

Directions

Begin boiling your lasagna noodles until cooked to your liking, drain, and rinse with cold water to remove starch. Once cooked, leave the pasta in a pot of cold water to keep the noodles separate.

In a large skillet over medium heat, add two tablespoons of olive oil, finely chopped garlic, cooking while occasionally stirring until the garlic turns clear. In the same skillet, cook and crumble beef and sausage until no longer pink; drain liquid. Add the sauce with meat and mix in seasonings and honey. Bring to a boil. Reduce heat; simmer, uncovered, 1 hour, stirring occasionally. Adjust seasoning with additional honey and Italian seasoning, if desired.

Meanwhile, in a large bowl, lightly beat eggs. Add parsley; stir in ricotta and Parmesan cheese.

Preheat oven to 375°. Spread 1 cup meat sauce in an ungreased (smear olive oil if you must) baking dish (13″ x 9″) recommended. Place your first layer with noodles, cover the noodle adequately with meat sauce, drizzle ricotta cheese mix, lightly sprinkle with mozzarella. Repeat this process until the pan is nearly full. For the top layer, add noodles, meat sauce, and spread mozzarella completely covering the top.

Cover; bake 50 minutes. Uncover; bake until heated through and slightly brown on top, about 20 minutes. Let stand 15 minutes before cutting.
